Imagine if one were to cook a steak, preferably a cube steak, in the same manner as fried chicken. That is what is known as a chicken fried steak. It is essentially a type of schnitzel. Texas was home to many German immigrants during the latter part of the 19th century and they brought their meat preparation methods with them. Sheldon, being from Texas, would most likely be quite familiar with chicken fried steak and that is the point of his statement.
